The flavor that started it all. I would make Jamaican Jerk Chicken for my catering clients with the pineapple chutney on the side to stave off the heat of the Jerk spice. Everyone who tasted it said that I should jar it and sell it in stores. I took their advice and did a ton of research and came up with a whole line of products. It was important for me to make sure that my products were low in sodium and sugar as I know many people who suffer from diabetes and hypertension. I used spices and herbs, as I was taught, to add more flavor to make up for the lower sodium and sugar in the recipes.
