Lyndigo Spice® Dipping sauce with sweet potato chips
Ingredients:
- 2 medium sweet potatoes. You can use yams, purple potatoes or whatever your local farmer is offering. 
- Olive oil in spray can or bottle 
- Sea salt, fine ground (optional) 
- 4 rimmed baking pan with racks 
Directions:
- Preheat oven to 325° convection bake setting. 
- Thoroughly rinse potatoes with water. Pat dry. 
- Using a mandolin or food processor with slicing blade, slice potatoes using thinnest setting. Be very careful using slicing blade as it’s very sharp! 
- Place racks on rimmed pans. 
- Place potatoes in single layer on racks. Place thicker slices on same rack and do the same with the thinner slices as their cooking times will vary. 
- Lightly spray potatoes with olive oil. Sprinkle Spice Rub on potatoes. 
- Turn each slice over, spray with oil and sprinkle with spice rub. 
- Place pans in oven and bake for 15 minutes. Keep rotating every 15 minutes until chips start to crisp. The thinner chips should be done around the 30-minute mark. The thicker chips should start to crisp around the 45-minute to 50-minute mark. 
Dipping Sauce:
- 1/2 cup full fat Greek yogurt 
- 1/4 cup all-natural mayonnaise 
- 1 tablespoon Lyndigo Spice® Original Spice Rub 
- Mix all ingredients together in small bowl and refrigerate until chips are done.
