Baked Black-Eyed Peas
Ingredients:
- 3 Cans organic black-eye peas (15-16oz) 
- 1 Can Vegan baked beans 15-16oz) 
- 1/4 cup Blackstrap molasses 
- 1/4 cup Dried minced onion or 1 large onion, diced small 
- 2 Tablespoons Dried minced garlic 
- 1/2 cup Mustard 
- 1 jar Lyndigo Spice® Smokey Peach & Cherry Chutney 
- 2 Tablespoons Lyndigo Spice® Original Spice Rub 
- 2 Sprigs fresh rosemary 
- 1 1/2 cups Brown sugar 
- 2 Tablespoons Pork fat (optional) 
Directions:
- Preheat oven to 365° 
- Add all ingredients except chutney to medium Dutch oven. 
- Mix until combined and cover. Place in oven on middle rack. 
- Cook for one hour. Carefully remove from oven and stir in chutney. 
- Cover and cook for 1/2 hour. 
- Remove from oven, stir. 
- Cook uncovered for another 1/2 hour. 
- Place peas back in the oven covered. Turn the oven off. The sauce will thicken as the oven cools down.
