Baked Black-Eyed Peas
Ingredients:
3 Cans organic black-eye peas (15-16oz)
1 Can Vegan baked beans 15-16oz)
1/4 cup Blackstrap molasses
1/4 cup Dried minced onion or 1 large onion, diced small
2 Tablespoons Dried minced garlic
1/2 cup Mustard
1 jar Lyndigo Spice® Smokey Peach & Cherry Chutney
2 Tablespoons Lyndigo Spice® Original Spice Rub
2 Sprigs fresh rosemary
1 1/2 cups Brown sugar
2 Tablespoons Pork fat (optional)
Directions:
Preheat oven to 365°
Add all ingredients except chutney to medium Dutch oven.
Mix until combined and cover. Place in oven on middle rack.
Cook for one hour. Carefully remove from oven and stir in chutney.
Cover and cook for 1/2 hour.
Remove from oven, stir.
Cook uncovered for another 1/2 hour.
Place peas back in the oven covered. Turn the oven off. The sauce will thicken as the oven cools down.
